Grapes: Sangiovese.
Harvest: mid-September, manual harvest with selection of the grapes.
Vinification: early harvest of the grapes, soft pressing, fermentation with selected yeasts at a controlled temperature. Refermentation in closed autoclave, long Charmat method (3 months).
Sensory characteristics: pale pink color with violet reflections; fine and delicate perlage; persistent on the nose, with prevailing floral scents, notes of red fruits, strawberry; good fullness of taste, fresh, with a pleasant acid sensation.
Pairings: aperitifs, fish appetizers, shellfish, cold and vegetarian dishes. Also ideal for the whole meal.
